Landmark Creamery makes delightful sheep and cow milk cheese that takes shape, texture, aroma, and flavor in a myriad of ways. They work directly with regional family farms around Albany, Wisconsin to make their milk blend diverse, distinct, and signature.
Their Pecorino-style, called Pecora Nocciola, is that table cheese you've been seeking. A semi-firm texture, the cheese is gratable when cool, and snack-able when room temperature. Flavors of olives and salty marcona almonds linger on the palate after eating a bite of this cheese.
We've found ourselves another Wisconsin classic that will keep our Grotto stocked.
