Cabra LaMancha is a washed-rind goat cheese influenced by traditional varieties from the Pyrenees in Spain’s Basque region. Throughout its 90-day maturation, skilled cheesemakers meticulously hand wash, dry brush, and turn the cheese multiple times to develop its distinctive character.

Cabra LaMancha is a proprietary Spanish-style, semi-soft, washed-rind cheese made from goat's milk by FireFly Farms in Maryland. Inspired by the Basque cheeses of northern Spain, it develops an earthy, vegetal, orange rind during its 90-day aging process, which involves hand-washing and flipping the cheese wheels. This silky cheese offers a smooth texture, a robust and funky flavor, and pairs well with sweet and fruity elements.
