Consider Bardwell Farm is a 300-acre farm that was originally established in 1864 by Consider Stebbins Bardwell. It was Vermont's first dairy coop, ("The Pawlet Cheese Company") where Consider made cheese out of small neighboring farms' milk and sold it as far as New York City. A century and a half later, Angela Miller and Russell Glover are revitalizing the tradition with pasture-based raw milk from cows with the support of their neighbor farm partner, Indian River Farm.

Pawlet, 6oz - Inspired by an Italian-style Toma, this semi-firm washed-rind cheese is mild, creamy, and grassy with notes of roasted peanuts along the rind. It makes the most decadent grilled cheese. Try Pawlet with whole grain mustard, toast, and a wheat beer.

Dorset Mini, 12 oz - Rich, buttery, and with an earthy complexity beneath its orange-hued exterior, Dorset Mini is a soft-ripened, washed-rind cheese adored for its creaminess, punctuated by a bit of funk. Reminiscent of a hearty Taleggio or Pont L’Évêque, enjoy with honey, apples, & a glass of bubbly!
