With flavors of salted cashews, cured meat, and smoke, Rush Creek Reserve is one of the season's most coveted cheese. When ripe and oozy, it is perfectly paired with roasted vegetables or gourmet potato chips for an unforgettable winter feast.

*Please note: Rush Creek Reserve’s rind is naturally mottled with white, blue, and green cheese molds. This is a part of the rind’s natural aging process and help soften the interior paste to its spreadable custard texture.

Based in Dodgeville, Wisconsin, their impressively small team goes through amazing feats of milking their cows and perfecting two cheeses, Pleasant Ridge Reserve and seasonal Rush Creek Reserve, only available from late Fall through early Winter.

Serving Suggestions

Serve with a Dry Riesling, a hoppy ale, roasted vegetables, potato chips, cured meat, and a crusty baguette. Excellent when baked to gooey perfection. When ripe (or, baked), cut off the top and spoon the cheese onto your veggies and meats for a fabulous dinner experience.

Wagyu and More!

I recently received my Cheese Grotto selections of Wagyu Bresaola, Wild Rosemary from Goat Rodeo, Marin French Cheese Petite Camembert and Sour Cherry Pomegranate Conserve. At a small dinner party they were so popular I worried guests would want to skip dinner and just dwell on the charcuterie offerings! It was wonderful to have a unique goat cheese offering for my guest who limits dairy. The conserve has enhanced meat, cheese, and bread at my table. I recommend all of these items from Cheese Grotto.

Chocolates

While the service accommodations were awesome and the chocolates were divine, they were much smaller than expected. I am not sure I could afford them again given the size of the chocolates with that price.
