Inspired by classic European monastic cheeses, Benedictine is a semi-soft, washed rind cheese. Its orange rind, reminiscent of Munster, reflects its connection to the German word for monastery and showcases a heritage of traditional craftsmanship. Benedictine combines sheep, goat, and cow’s milk sourced from local small farms in Wisconsin. Once shaped into wheels, the cheeses are moved to an aging cellar where they undergo regular washing and turning throughout a twelve-week maturation process.

We love Benedictine for the unique taste profile it shows. Mild and buttery toward the center of the wheel, it becomes a bit stronger and more pungent toward the rind. A new nibble in every bite!

Benedictine is a washed rind cheese made with fresh sheep, goat and cow milk. It is cellar cured and hand rubbed for 12 weeks before packaging.

About the Producer

What began in 1883 continues as Carr Valley Cheese under the direction of Sid Cook to this day. Sid Cook is a 4th generation Master Cheesemaker who is Master Certified in Fontina, Cheddar, Gran Canaria®, and Mobay®

Serving Suggestions

Try Benedictine with some rustic, wholegrain bread or crackers. Add sweet with blackberry jam, or savory with caramelized onions. Beverages might include fruit forward white wines and red blends. For brews, go with a traditional Trappist Beer. Apple cider is a pleasant and unanticipated pairing as well.
