Long Description

Cheesemakers first produced Colby, a close relative of Cheddar, in the central Wisconsin town of Colby in 1885.

Colby cheese features an exceptionally mild, buttery, and slightly sweet flavor with a gentle lactic finish. Its semi-hard, springy, and highly elastic body is more moist and smoother than cheddar, characterized by an open, lacy texture peppered with tiny, irregular holes. This unique profile is achieved through a washed-curd process where cold water cools the curds to halt acidification, skipping the traditional cheddaring method. Because it is aged for only one to three months, it retains its moisture and melts exceptionally evenly without separating. This makes it ideal for grilled cheese, burgers, macaroni, and chili, though it also pairs beautifully with fresh fruits and is frequently marbled with Monterey Jack to create Colby-Jack.
