After you've mastered how to make ricotta at home, it's now time to try your hand at a homemade Ricotta Salata recipe. Fresh ricotta is drained, salted, and pressed into a wheel and then aged in the refrigerator for one week, ideally in a Cheese Grotto. This is a great introduction to cheesemaking recipe.
I’ve tested different variations of this recipe, and the lemon juice set version is my acid of choice. The great thing about making mascarpone from scratch is that it doesn’t hurt the final result if you add a little more lemon juice to the recipe, which only makes the final creamy goodness brighter in lemony flavor.
