Sharon Creek Brie
Awarded the Bronze at the World Cheese Awards in 2019, Sharon Creek Brie is a pasteurized, bloomy-rind cow milk cheese with notes of white button mushrooms, grass-fed butter, and baked bread. Made by My Artisano in Cincinnati, Ohio this cheese is a crowd-pleaser and pairs wonderfully with Sauvignon Blanc, Chardonnay, Chenin Blanc, Riesling, and Sparkling Brut.
One of our favorite table cheeses, the Haya Tomme is an elegant, fresh take on a French-style tomme cheese. Tomme is produced mainly in the French Alps and in Switzerland. It is traditionally made with skimmed milk as the fat was used to make butter. In this case, Lamp Post Creamery in Lebanon, Ohio uses locally sourced raw whole milk. Semi-firm and aged a minimum of two months, the cheese has notes of buttermilk, brown butter, cured meat, and hazelnuts with a brown mushroom characteristic closer to the rind. Pairs beautifully with a Chardonnay or Pinot Noir in tandem with our dark chocolate.
Toby Clothbound Cheddar
Reminiscent of the UK's Lincolnshire Poacher cheese in appearance and flavor profile, Toby clothbound cheddar is a distinguished American raw milk cheese. Made with raw milk at Lamp Post Creamery in Lebanon, the milled curd is carefully wrapped in cheesecloth and then brushed with butter. Toby boasts flavors of bright pineapple, roasted cashews, and olives with a minerality closer to the rind. Pair Toby with a light to medium-bodied red with low tannins, such as Pinot Noir, Merlot, Cabernet Franc or Syrah.

Made with fruity Peruvian beans and toasty notes from Ecuador’s Cacao Arriba the blend leaves you with a balanced taste of dried fruit and sweet spices. Pair with a delicate Bordeaux like Chateau Viaud-Laland, Lalande de Pomerol (2014) and the Sharon Creek Brie. The rich and creamy texture of the cheese paired with the dark chocolate, and long finish of the Bordeaux make an indulgent combination.
