As soon as you subscribe, you will receive an email with a link to a Cheese Preferences Survey. Please fill this out right away, as we will wait to ship your first subscription box until we have received the survey.
If this is a gift, your gift recipient can fill out the Survey to their personal preferences.
You will also receive an email with instructions on how to Create your Account. Once your account is created, you will be able to manage your subscriptions, update billing and shipping information, skip a month, and adjust the quantity of cheeses.
Your subscription is a recurring monthly subscription, so you will continue to receive your monthly shipment until you decide to cancel. You are welcome to cancel at any time.
The billing cycle is every 4 weeks on the Thursday prior to the Monday ship-date. You will expect to receive a confirmation of your credit card charge when the payment is processed.
This monthly cheese subscription includes the added bonus of monger-selected accompaniments, so you can explore American artisanal cheesemakers with a new perspective. Each month, you will receive a personalized selection of cheeses that will highlight these small production creameries, complete with digital literature on tasting, serving, pairing and storing your cheeses. Our mission is to educate as well as provide a selection of delicious cheeses - and pairings! - that are perfectly stored in your Grotto for weeks and months so you will always have just the right selection to share and enjoy with good company.
Artisan Cheese - According to the American Cheese Society, "artisan or artisanal implies that a cheese is produced primarily by hand, in small batches, with particular attention paid to the tradition of the cheesemaker’s art, and thus using as little mechanization as possible in the production of the cheese."
Over the past decade, the American Artisan cheese industry has been recognized internationally for its quality and integrity. Small to medium-scale artisan cheesemakers have a core set of values - high-quality milk makes incredible cheese, and high quality land and animal management makes for incredible milk. In our current industrial agriculture system, committing to these core values requires long hours of hard work and an acute attention to detail.
