These babies are sweet, tart, and creamy. Reminiscent of key lime pie, this is our recommendation for #popsicleweek. It’s the weekend people, and it’s time to celebrate summer!
- 1 1/2 cups fresh pitted cherries
- 1/4 cup maple syrup
- 1 lime, juice and zest
- 1/3 cup creme fraiche
- 1/4 cup crushed graham crackers
In a blender or food processor, blend the cherries, maple syrup, and lime juice and zest until smooth. Stir in the crème fraîche so white streaks remain.
Alternate layering the cherry mixture with graham cracker crumbs into popsicle molds. Freeze until hard, at least six hours.
