Peaches and Crème Fraîche Pops

Come August, I prefer having a popsicle for breakfast. This popsicle is great for breakfast or dessert, and is a spin off the classic peaches and cream combination that is an excellent, fresh summer treat. Preserve the best of summer in frozen pop form! This recipe is heavy on the peaches to give you a big, fruity mouthful. The vanilla bean spiked crème fraîche holds it all together.

Peaches & crème fraîche popsicles

  • 1/2 cup creme fraiche
  • 1/2 vanilla bean, scraped
  • 3 tablespoons honey
  • 3 ripe peaches, peeled and chopped into bite-size pieces

In a large bowl, stir together the creme fraiche, vanilla bean seeds, and honey until combined. Fold in the peaches (including any juices).

Fill popsicle molds and freeze until hard, at least six hours.

And because I couldn’t help myself, here are some tunes to play while making the pops, Peaches and Cream by 112.
