Master Cheesemaker Sid Cook, offers an imaginative reinterpretation of the classic French Morbier cheese. His creation combines a layer of sheep’s milk cheese with a layer of goat’s milk cheese, separated by a delicate band of grapevine ash and expertly pressed. The result is a cheese with both subtlety and earthiness. Savor each layer individually, then experience the harmonious blend of all three elements for a uniquely refined tasting journey.

Long Description

Mobay is made in two halves, one from sheep's milk and one from goat's milk. The two halves are pressed together after production, but separated by a decorative line of ash running horizontally through the middle.

About the Producer

Carr Valley Cheese, founded in 1883, continues today under the direction of Sid Cook. He is a 4th-generation Master Cheesemaker who is Master Certified in Fontina, Cheddar, Gran Canaria®, and Mobay®.

Serving Suggestions

Serve Mobay with dried and fresh fruits like apples, pears, and figs, or with sweeter pairings like dried cherries or preserves. Beverages might include fruit-forward white wines such as Chenin Blanc or Riesling, or a Belgian-style ale.
