We love Alpha Tolman by Jasper Hill Farm. Made with a proprietary blend of cultures, this "Mountain Cheese" (also known as Alpine Cheese) has a similar flavor profile to Gruyère AOP and Appenzeller. Alpha Tolman has a buttery, fruit & nut flavor when young, developing bold meaty, caramelized onion flavors as it matures. The texture is dense and pliant, easily portioned and ideal for melting. Received a Super Gold Award at the 2012 World Cheese Awards.
