This month was full of an Edible Brooklyn feature, the Food + Enterprise Conference, and a Raw Milk Cheese Tasting Event. Spring has sprung!

Raw Milk Cheese Appreciation Day just happened, and it was glorious. We had a full house of 35 people at 61 Local. They enjoyed four courses of regional raw milk cheeses paired with seasonal ingredients. I love this event for two reasons: 1) It is a platform to celebrate and promote #rawmilkcheese and 2) I get to focus on culinary pairings that bring out the best, and perhaps the unexpected, of each cheese.
