This month was full of an Edible Brooklyn feature, the Food + Enterprise Conference, and a Raw Milk Cheese Tasting Event.  Spring has sprung!

I was lucky enough to be featured in the latest issue of Edible Brooklyn.  It is always encouraging to be recognized for the entrepreneurial process, even before the product has launched.  Read more about the journey and the specifics of the Grotto.

Assortment of raw milk cheeses

Raw Milk Cheese Appreciation Day just happened, and it was glorious. We had a full house of 35 people at 61 Local. They enjoyed four courses of regional raw milk cheeses paired with seasonal ingredients. I love this event for two reasons: 1) It is a platform to celebrate and promote #rawmilkcheese and 2) I get to focus on culinary pairings that bring out the best, and perhaps the unexpected, of each cheese.
