Raspberry Lemon-Lime Rickey Summer Cocktail Recipe
Take a classic raspberry lime rickey cocktail and add a twist of meyer lemon for even more brightness, This recipe has been adapted from Bonnie's Jams.
¼ cup Bonnie’s Jams Raspberry Lime Rickey preserves
Juice of half a lime
¼ tsp. fresh lime zest
2 ounces Gin
1 bottle sparkling lemonade (we used Meyer Lemon)
Lime wedge for garnish
Basil for garnish
In small bowl, combine Raspberry Lime Rickey preserves, lime juice and zest. Mix and let sit for 10 to 15 minutes. Using fine mesh strainer, strain mixture, using back of wooden spoon to press through liquids.
Fill cocktail shaker with ice, pour in the freshly made syrup, add in gin and shake. Pour mixture into glass with ice and top with sparkling lemonade. Garnish with basil.
