Cheese and Turkish Pepper Pide

A cheesy flatbread that is made for a group gathering, pide is the Turkish version of pita bread that is traditionally prepared during Ramadan. It can be enjoyed with any meal as a flavorful, fluffy, light side bread. You can rotate the varietal of Pepper Crush's Turkish pepper flakes and the type of cheese used in this recipe to keep life exciting.

Ingredients
3 cups flour
1 cup warm water
1 1/2 teaspoons of salt
1 tablespoon melted butter
4 oz Kasseri, Cheddar, or Jarlsberg cheese (try all three for fun!)
Antakya pepper (w/Kasseri) or Urfa pepper (w/Cheddar) or Islahiye pepper (w/Jarlsberg)
Directions
Preheat oven to 475F, heating two baking sheets. You can also use a pizza stone.
Combine flour, salt and water in a mixing bowl.
Stir until mixture forms a ball.
Knead for 5-6 minutes. Feel free to add flour or water if necessary.
Turn onto floured surface and divide into 5 balls.
Flatted the balls into ovals.
Grind the cheese of your preference and mix with a liberal handful of the pepper.
Top the dough with cheese mixture.
Crimp about half an inch along edge of pide to form a border.
Slide the pide onto a hot baking sheet and cook for 12 min until they are crisp and golden brown.
Remove from oven and brush the edges with melted butter.
Serve fresh from oven, and enjoy!

I made this for a book launch event and it was the hit of the party. My whole family loves it! We turn them into pizza boats. It’s quick and easy. Always a crowd pleaser. I got the Urfa pepper online. It’s not hot, just adds great flavor. We love to pair it with different cheese options.
