Based on a dairy farm in Minnesota, head cheesemaker and founder Alise Sjostrom is inspired by traditional cow milk cheese categories such as Brie and clothbound Cheddar, as well as a semi-soft washed tomme; however, Alise brings a truly American flair to the flavor profile and texture of her cheeses.

When young, the brie is dense, bright, with notes of white mushroom and crème fraîche.
