Located on Spring Brook Farm in Reading, VT; they have been making cheese since 2007. They began with Tarentaise, an alpine mountain cheese, using cheesemaking methods that are traditional to the Beaufort Region of France. From there they developed our American Raclette: Reading and Ashbrook: their ode to the French Morbier.
They knew from the beginning that the key to making great cheese was great milk. As a subsidiary of the Farms for City Kids Foundation, Spring Brook Farm is a traditional dairy farm that covers 1,000 acres and maintains a herd of 100 registered Jersey. It is an educational farm, and the cows are closely monitored, loved and cared for. This attention to the cows and milk production gave them their parameters for milk standards. Since then, they have partnered with two other small family dairy farms in their region who provide the same level of care to their Jerseys and milk production.
