Microbrews and specialty cheeses are a joy to pair together. Both are more complex and nuanced in flavor, texture, and body than their more conventional counterparts. So you can imagine that Jason Sahler, owner of Strongrope Brewery in Brooklyn, and I had a lot to talk about. We threw in a wild card pairing at the end to show just how adventurous you can be while pairing different styles of cheese and beer together. It really depends what flavor profile you are trying to highlight in both the beer and the cheese. Depending on which beer you choose, the cheese will be highlighted in different ways, and vice versa.
