Our favorite and most iconic American artisan goat cheese producer, Capriole Goat Cheese, collaborated with us on an exclusive, limited-run adaptation of their delicate, bloomy-rinded round, Flora. Over months, we tested different batches of Flora rolled in paprika, wrapped with a bourbon-soaked chestnut leaf, and ripened in their cave. The result is a stunning, red-tinged rind and a green-hued leaf, offering slightly spicy and smoky flavors while still maintaining a grassy, bright flavor profile. Named Noelle, this cheese will be an eye-catching centerpiece on any holiday cheeseboard.

Each shipment includes 2 Noelle wheels (6-oz each) which fit perfectly in our Cheese Grottos for your next at-home ripening project.

*Please note: this style of goat cheese can have a mottling of blue molds that appear on the rind. This is completely natural and edible.

Capriole Goat Cheese was established in 1988 in Greenville, Indiana, when domestically made goat cheeses were very new to the American diet. The creamery’s founder, Judy Schad, is one of the original pioneers of goat cheese in the United States and has set the bar incredibly high. Inspired by chèvre produced in France’s Loire
Valley, her cheeses are both incredibly flavorful, simple, and delicate. Judy believes that a focus on milk quality is the best way to make cheese, and we couldn't agree more.

Pair with a sauvignon blanc or sparkling wine, champagne grapes, and duck mousse.
