Capriole Goat Cheese is a small American artisan goat cheese creamery in Greenville, Indiana. Founded by Judy Schad and her husband Larry, Capriole has been producing goat cheeses inspired by French traditions for 35 years. In fact, Judy Schad’s first cheese was Wabash Cannonball, and this is the cheese that originally put her on the map as an American artisan pioneer. The Wabash Cannonball has won countless awards, including American Cheese Society Best in Show. It is rolled in vegetable ash before being aged to develop it's beautiful wrinkly rind. It can be enjoyed young or ripe.

Each shipment includes 2 Wabash Cannonballs (4-oz each) which fit perfectly in our Cheese Grottos for your next at-home ripening project.

*Please note: this style of goat cheese can have a mottling of blue molds that appear on the rind. This is completely natural and edible.

About the Producer

Capriole Goat Cheese was established in 1988 in Greenville, Indiana, when domestically made goat cheeses were very new to the American diet. The creamery’s founder, Judy Schad, is one of the original pioneers of goat cheese in the United States and has set the bar incredibly high. Inspired by chèvre produced in France’s Loire
Valley, her cheeses are both incredibly flavorful, simple, and delicate. Judy believes that a focus on milk quality is the best way to make cheese, and we couldn't agree more.
