Boxcarr Farms, a working first-generation family farm in Cedar Grove, North Carolina established Boxcarr Handmade Cheese in 2015.  The sister-brother duo and their extended family have made the cheese dream a reality.  Their cheeses are inspired by small Italian farmstead creameries. Alongside their own herd of mixed breed dairy goats, Boxcarr sources local milk from a few small family-owned dairies who raise their cows with the greatest of care and highest standards. Their dedication to family and community comes through in every bite.

  • Campo, 8oz - Named for the Italian translation of field, Campo’s quick, cold-smoking, conjurs the campfire warmth alongside the meatiness of its washed rind. The pasteurized cow milk takes on notes of toasted walnut and brown butter, while an ever-present flavor of beautifully-cured meat looms large.

Age: 3 to 6 months

The cheese fits well in the Grotto Classico, Grotto Fresco, Grotto Mezzo, or Grotto Piatto.
