This grilled cheese recipe shows how versatile both Gruyère AOP cheese can be when cooking with cheese as well as how sweet and spicy peppers are a perfect pairing for cheeses.  Chili Pepper Jam is one of my favorite cheese pairings and the mushrooms bring out the savory characteric of the Gruyère AOP cheese.
